Step-by-Step Guide

Step 1

Mix the flour, baking powder, vanilla sugar, salt, cinnamon, ground ginger, and nutmeg.

In a bowl, beat the eggs with sugar and butter until smooth.

Step 3

Peel the zucchini and grate it on a coarse grater into a small bowl. You should have about one cup. Squeeze the grated zucchini thoroughly and transfer it to the bowl with the beaten eggs, then mix in small portions with the flour mixture.
