Zucchini and Carrot Pancakes
Ingredients
- Wheat Flour ½ cup
- Baking Powder ½ teaspoon
- Salt ½ teaspoon
- Ground Black Pepper ¼ teaspoon
- Chicken Egg 1 piece
- Milk ¼ cup
- Carrot 10 oz
- Courgette 10 oz
- Scallions 2 pieces
- Sour Cream to taste
- Vegetable Oil to taste
Step-by-Step Guide
Step 1
In a large bowl, mix the flour, baking powder, salt, and pepper.
Step 2
In another bowl, beat the egg and milk, then add the grated zucchini and carrot, and finely chopped onion. Mix and combine with the dry ingredients.
Step 3
Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Pour about 0.3 cup of batter with a ladle and spread it across the surface of the skillet. Cook for about 2 minutes on each side until cooked through and golden brown, adding more oil if necessary. Remove from the skillet and roll into a tube. Secure with a toothpick. Cook all the pancakes and serve with sour cream.
