Ingredients

  • New Potatoes 5 oz
  • Olive Oil 2 tablespoons
  • Courgette 2 pieces
  • Garlic 2 cloves
  • Blue Cheese 5 oz
  • Chocolate eggs 3 pieces
  • Onion 1 head
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Boil the potatoes in boiling water for 10-12 minutes until soft. Drain and cool.

Step 2

Meanwhile, heat 1 tablespoon of olive oil in a 20 cm skillet and sauté the finely chopped onion and sliced zucchini for 5-6 minutes until soft. Add the minced garlic and cook for another minute. Remove from heat.

Step 3

Slice the potatoes into 5 mm thick rounds.

Step 4

In a large bowl, beat the eggs, and season with salt and pepper.

Step 5

Wash the skillet and place it over medium heat. Add the remaining oil and pour in the eggs. Add the potatoes and zucchini to the eggs, and distribute the pieces of cheese among them. Cook for 5-6 minutes until the eggs are set.

Step 6

Preheat the broiler in the oven. Place the tortilla under the broiler for 5-6 minutes until a golden crust forms. Cut into segments and serve.
