Description

Ingredients
- Sugar 15 oz
- Milk 10 fl oz
- Butter 5 oz
- Dark rum 1 tablespoon
- Coarse Salt ¼ spoons
- Wheat Flour 15 oz
- Chicken Egg 5 pieces
- Ground Cinnamon 1½ spoons
- Vegetable Oil to taste
- Ground dried cherries to taste
- Ricotta cheese 15 oz
- Vanilla extract 2 spoons
- Orange zest 1 tablespoon
Step-by-Step Guide
Step 1
In a saucepan, bring two tablespoons of sugar, milk, butter, salt, and rum to a boil. Add the flour, mix well, and cook for two minutes. Transfer the dough to the bowl of a stand mixer and beat, adding the eggs one at a time, until light and fluffy. Fill a pastry bag with the dough and pipe 3 cm diameter pastries onto a sheet of parchment paper. In a separate bowl, mix 200 grams of sugar with two tablespoons of cinnamon, and in another bowl, combine ricotta, the remaining sugar, vanilla, cinnamon, and zest, then transfer to a pastry bag.
Step 2
In a pot, heat vegetable oil to 355°F. Carefully lower the pastries into the oil one by one and fry for three minutes.
Step 3
Transfer to paper towels to cool. Roll in a mixture of sugar and cinnamon, then garnish with cream and cherries.
