Description
Zabaglione is a strawberry mousse, a classic Italian dessert.
Ingredients
- Strawberry 25 oz
- Sugar 5 tablespoons
- Farm fresh eggs 4 pieces
- Cream 5 fl oz
Step-by-Step Guide
Step 1
Remove the stems from the strawberries and slice them lengthwise. Separate the egg yolks from the whites.
Step 2
Mix 500 grams of strawberries in a bowl with half of the sugar and let sit until juice forms. Make a puree from the remaining strawberries: blend with 1 tablespoon of sugar and 1 tablespoon of water. Whisk the remaining sugar with the yolks over a double boiler until smooth. Add the puree and whisk into a thick, fluffy cream (about 10–12 minutes).
Step 3
Whip the cream until thick and fold it into the cream mixture, then add the strawberries along with the juice.
Step 4
Serve immediately, while the dessert is still fluffy, as it settles quite quickly. Zabaglione looks very beautiful in clear glasses.
