Yellow Plum Sorbet

Ingredients

  • Water 10 fl oz
  • Dried Yellow Plums 0 lbs
  • Sugar 10 oz
  • Rice Sweet Wine 2 tablespoons

Step-by-Step Guide

Step 1

Peel the ripe plums, cut them in half, twist to remove the pits. If the skin is still young and firm, boil the plums in water until soft for about 8–10 minutes. Drain the water, cool the plums, and remove the skin from the cooled plums. Chop the plums roughly, place them in a blender, and blend into a smooth puree. Pour the puree into a deep bowl.

Step 2

Prepare the syrup for the sorbet. To do this, combine water and sugar in a saucepan, place it over medium heat, and cook, stirring, until the sugar is completely dissolved. Lower the heat and cook the syrup for another 2–3 minutes. Remove the saucepan from the heat, cover it, and place it in the refrigerator for an hour.

Step 3

Mix the cold syrup into the plum puree, add a couple of tablespoons of wine, cover, and refrigerate for another couple of hours. Afterward, remove it, pour the mixture into an ice cream container, and place it in the freezer overnight. Then, take out the frozen crystallized mixture, let it thaw slightly at room temperature, and blend in parts in the blender at high speed until smooth. Transfer the blended sorbet back into the container and return it to the freezer for at least three hours before serving.
