Ingredients
- Wheat Flour 2 glasses
- Coarsely Ground Rye Flour 1 glass
- Wheat Flour ½ glasses
- Flaxseeds ½ glasses
- Flaky sea salt 1 tablespoon
- Activated Baking Soda 1 tablespoon
- Sunflower Seeds ½ glasses
- Shelled pumpkin seeds ½ glasses
- Toasted Sesame ¼ glasses
- Ground coriander ½ spoons
- Nutmeg ¼ spoons
- Clove 3 pieces
- Ground Cinnamon ¼ spoons
- Cardamom 3 pieces
- Green peppercorns 3 pieces
- Kefir 2 glasses
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
In a deep bowl, combine the flour, seeds, and baking soda.
Step 3
Crush the spices with coarse salt in a mortar.
Step 4
Sift the crushed spices and salt into a bowl of flour and mix thoroughly.
Step 5
Add a cup of kefir and mix. Then, while kneading, gradually pour in a second cup of kefir – you need to achieve the consistency of a soft, slightly sticky shortcrust pastry.
Step 6
Knead the dough thoroughly by hand, shape it into a round loaf. Place it on a baking sheet.
Step 7
Using a sharp knife, make a cross-shaped slash on top, cutting about halfway through the thickness of the loaf.
Step 8
Bake for 45 minutes at 355°F.
Step 9
Remove the bread from the oven, brush the surface with water, and return it to the oven on a rack for another 10 minutes. This will make the crust softer.
Step 10
Wrap the finished bread in a towel and let it cool for 30 to 50 minutes.
Step 11
Serve with butter, homemade cheese, and honey.
