Ingredients

  • Wheat Flour 20 oz
  • Milk 10 fl oz
  • Salt a pinch
  • Sugar 5 oz
  • Butter 5 oz
  • Marzipan 5 oz
  • Brown Sugar 0 oz
  • Egg whites 3 pieces
  • Rum 0 fl oz
  • Apricot Jam 5 oz
  • Fresh Yeast 0 oz
  • Hazelnuts 5 oz

Step-by-Step Guide

Step 1

Heat the milk to about 95°F (35°C).

Step 2

Pour the flour into a bowl and make a well in the center. Crumble the yeast into the well, sprinkle with a small amount of sugar, and pour in the milk.

Step 3

Lightly dust everything with flour, cover the bowl, and place it in a warm spot for 15 minutes.

Step 4

Melt the butter and let it cool.

Step 5

Add the melted butter, remaining sugar, and salt to the flour mixture.

Step 6

Knead until smooth, cover the dough, and let it rise in a warm place for 30 minutes.

Step 7

Chop the marzipan.

Step 8

Grind the hazelnuts into flour.

Step 9

Mix the nuts, marzipan, rum, brown sugar, and egg whites. Blend everything with a mixer until smooth.

Step 10

Punch down the risen dough and roll it out to approximately 80x30 cm.

Step 11

Spread the nut filling over the dough and smooth it out.

Step 12

Roll it up and cut it into pieces about 2 cm thick.

Step 13

Grease a 26 cm diameter springform pan with fat and dust with flour.

Step 14

Place the pieces of the roll in the pan so that the filling is on top and bottom.

Step 15

Cover the pan and let it rise in a warm place for 15 minutes.

Step 16

Preheat the oven to 180°C (350°F).

Step 17

Bake the pie for about 45 minutes until golden brown.

Step 18

Heat the apricot jam and brush it over the warm pie.
