Description
In this broth, you can cook fish as well as crustaceans. If you want to cook crayfish in this broth, use dill instead of fennel.
Ingredients
- Onion 1 head
- Carrot 1 piece
- Leek 1 piece
- Celery stalk 1 piece
- Parsley 0 oz
- Thyme ½ bunch
- Fennel 2 pieces
- Garlic 1 clove
- Bay leaf 1 piece
- Water 0 qt
- Salt to taste
- Green peppercorns 6 pieces
- Apple Wine 0 qt
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Chop the vegetables, dice the celery.
Step 3
Place the vegetables in a large pot and pour in the water.
Step 4
Bring to a boil, reduce the heat, cover, and simmer for about 15 minutes.
Step 5
Add the wine and simmer for another 15 minutes.
Step 6
At the very end, add the peppercorns.
