Ingredients
- Dried Chinese mushrooms 0 oz
- Pickled Chanterelles 0 oz
- Dried Chinese mushrooms 0 oz
- Olive Oil 4 tablespoons
- Garlic 3 cloves
- Spanish onions 1 head
- Fresh Mushrooms 20 oz
- Dried Epazote Leaves 0 oz
- Thyme 2 sprigs
- Oregano 2 sprigs
- Fresh Rose Hips 1 sprig
- Ground ancho chili pepper 3 pieces
- Chicken Broth 5 qt
- Salt to taste
- Lime 1 piece
Step-by-Step Guide
Step 1
Soak the dried mushrooms in hot water for 20 minutes. Drain and cut into medium pieces.
Step 2
Heat the olive oil in a pot over medium heat, add the sliced onion and sauté for 3 minutes. Add the thinly sliced garlic and cook for another 5 minutes. Then add the chopped fresh mushrooms and cook until soft and slightly browned, about 5 minutes.
Step 3
Add the dried mushrooms, tied herb sprigs, chili, and broth. Bring to a boil, reduce the heat, and simmer for 1 hour.
Step 4
Remove from heat, take out the bundle of herbs, and season with salt to taste. Serve garnished with lime wedges.
