Wild Mushroom and Thyme Soup
Ingredients
- Butter 6 tablespoons
- Onion 15 oz
- Oyster Mushrooms 5 oz
- Fresh Mushrooms 5 oz
- Shimeji mushrooms 5 oz
- Thyme 1 tablespoon
- Brandy 3 tablespoons
- Wheat Flour 2 tablespoons
- Chicken Broth 4 cups
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Melt the butter in a large pot over medium heat. Add the finely chopped onion and sauté until golden brown, about 5 minutes.
Step 2
Add the finely chopped mushrooms and minced thyme. Sauté until browned, about 8 minutes, then pour in the brandy. Stir for 30 seconds and add the flour.
Step 3
Slowly pour in the broth and bring to a boil. Reduce the heat and simmer uncovered for 10 minutes. Season with salt and pepper. Then blend with an immersion blender until creamy. Serve.
