Description

Whole Wheat Muffins with Raisins and Walnuts (Sugar-Free and Egg-Free)

Ingredients

  • Whole Wheat Flour 5 oz
  • Oats 5 oz
  • Walnuts 5 oz
  • Bananas 2 pieces
  • Apple 1 piece
  • Agave Syrup 2 tablespoons
  • Vegetable Oil 0 fl oz
  • Almond Milk 5 fl oz
  • Baking Soda 1 teaspoon
  • Raisins to taste
  • Ground Cinnamon to taste
  • Stevia Extract 1 teaspoon

Step-by-Step Guide

Step 1

Blend the oats and walnuts together in a blender. You can grind them to a flour-like consistency. I prefer to leave some pieces for texture. Mix with the whole wheat flour.

Step 2

Take 2 ripe bananas and 1 whole apple, place them in the blender, and puree until smooth. Add to the flour mixture and gently combine.

Step 3

Pour in any vegetable oil and add the agave syrup (2-3 tablespoons, adjust according to your desired sweetness) and about 150 ml of milk. I use almond milk, but any type will work. It's better to add the milk gradually; the mixture shouldn't be too liquid.

Step 4

Next, add the stevia (optional) and raisins with cinnamon. Adjust to taste. If you want it sweeter, add more raisins.

Step 5

Mix everything together, distribute into muffin cups, and place in the oven for about 30 minutes at 200-220°C (depending on your oven).

Step 6

Check for doneness with a toothpick. And voilà!
