Whole Wheat Bread
Ingredients
- Dry yeast 0 oz
- Whole Grain Bun 5 oz
- Wheat Flour 15 oz
- Non-alcoholic sparkling wine 15 fl oz
- Ocean salt 0 oz
Step-by-Step Guide
Step 1
Combine the yeast with warm sparkling water, mix, and let sit for 10 minutes. Add the whole grain flour, first grade flour, and salt. Knead at high speed with a spatula or hook (you can do it by hand, but it's very tedious. The dough sticks terribly!) for 15 minutes.
Step 2
Place in a warm area for 2 hours, shape into loaves on a floured surface, and let rest for 45 minutes.
Step 3
Preheat the oven to 480°F, place a dish with boiling water on the bottom. Bake for 10 minutes with steam at 480°F and 20 minutes without steam at 355°F.
Step 4
Allow the hot bread to cool under a towel.
