Whole Pike Perch Pie
Ingredients
- Unleavened dough 0 lbs
- Perch 2 pieces
- Onion 2 pieces
- Butter 3 tablespoons
- Chopped Sage Leaves 0 oz
- Whole egg 2 pieces
Step-by-Step Guide
Step 1
Wash the fish, gut it, dry with a paper towel, and remove the bones.
Step 2
Preheat the oven to 390°F.
Step 3
Roll out the dough into an oval about 1.5 cm thick.
Step 4
Place the whole fish (what's left after processing) in the center.
Step 5
Slice the onion into rings, chop the parsley, and place on top of the fish.
Step 6
Place thin slices of well-chilled butter on top.
Step 7
Bring the opposite edges of the dough together and pinch them nicely. Let it rise under a towel for 20 minutes.
Step 8
Prick the pie on the sides and top with a fork in several places, and brush with egg yolks.
Step 9
Bake for about 2 hours (you may need to cover it with paper towards the end).
Step 10
Serve ONLY hot with broth!
