Description

The amount of salt can be adjusted depending on the saltiness of the cheese (use your favorite, not necessarily Gouda). You can also add your desired spices to the dough — chili, cumin, coriander, etc.

  • Rye Flour 0 oz
  • Coarse Sea Salt 0 oz
  • Ground Paprika 0 oz
  • Ground Black Pepper 0 oz
  • Unsalted butter 0 oz
  • Gouda Cheese 0 oz
  • Milk 0 fl oz

Step-by-Step Guide

Step 1

Preheat the oven to 200–210°C, convection mode.

Step 2

Sift both types of flour into a deep bowl. Add spices, grated cheese, and diced cold butter. Rub the mixture into crumbs, pour in the chilled milk (can be replaced with low-fat cream) and quickly knead into a shortcrust pastry.

Step 3

On baking paper, roll out the dough into a sheet (0.3–0.5 cm thick), cut into squares, and prick with a fork. Optionally, sprinkle the future crackers with coarse salt.

Step 4

Bake the crackers for 13–15 minutes until golden brown.
