Ingredients
- Scallops 1 piece
- Cucumbers 0 oz
- Radish 0 oz
- Peeled Cooked Shrimp 0 oz
- Milk 5 fl oz
- 10% cream 0 fl oz
- Tannur 0 fl oz
- Cold-smoked trout 0 oz
- Celery stalk 0 oz
- Champagne Vinegar 0 fl oz
- Dill 1 sprig
- Olive Oil 0 fl oz
Step-by-Step Guide
Step 1
Cut the celery stalk into sticks and marinate in vinegar for 15 minutes.
Step 2
Slice the cucumbers into matchsticks, and the radishes and scallops into thin rounds.
Step 3
Place the scallop, cod, and peeled boiled shrimp in the center of the plate.
Step 4
Garnish with pickled celery and sprigs of dill, and drizzle with herb-infused oil.
Step 5
Combine the milk, cream, and tan, then pour into a plate.
