Ingredients
- Aspen mushrooms 30 oz
- Onion 2 heads
- Water 0 qt
- Salt 1 teaspoon
Step-by-Step Guide
Step 1
Cut the mushrooms into quarters and transfer them to a food processor. Chop into small pieces in batches and transfer to a large pot.
Step 2
Finely chop the onion and add it to the mushrooms along with the water and salt. Bring to a boil, reduce the heat, and simmer uncovered for about 2 hours.
Step 3
Strain the mixture through a sieve into a large bowl, gently squeezing the mushrooms. You should have about 5 cups of broth. If you have less, add water; if you have more, continue cooking until the volume reduces to 5 cups.
