Description
This bread is called 'Wheel' because it is made in the shape of a large round loaf. The dough is mixed with second-grade flour, which is coarser and darker than the highest grade, resulting in a gray bread.
Ingredients
- Wheat Flour 10 oz
- Wheat Flour 25 oz
- Dry yeast 0 oz
- Ocean salt 0 oz
Step-by-Step Guide
Step 1
Combine all the ingredients in a mixer, add 700 ml of water, and knead until you achieve a smooth dough that doesn't stick to your hands or the sides of the mixer.
Step 2
Divide the dough into two portions and shape them into balls. Place them on a baking sheet or rack lined with parchment paper, cover with a towel, and leave in a warm place for one hour to allow the size of the balls to double.
Step 3
Before baking, brush the dough with water and make a hole in the center of each loaf with your finger.
Step 4
Place the baking tray in an oven preheated to 480°F for one hour. You can check for doneness with a wooden stick: if it comes out dry from the bread, you can remove the loaf from the oven.
