Wheat-Rye Yeast Bread with Raisins and Caraway

Ingredients

  • Wheat Flour 15 oz
  • Coarsely Ground Rye Flour 5 oz
  • Salt to taste
  • Water 10 fl oz
  • Raisins 10 oz
  • Ground Caraway 1 teaspoon
  • Dry yeast 0 oz

Step-by-Step Guide

Step 1

Mix the raisins and caraway seeds.

Step 2

Combine both types of flour, rub the yeast until it forms fine crumbs. Add salt, water, dried fruits, and knead the dough. Form the dough into a ball, cover it, and let it rest for 1 hour.

Step 3

Place the dough on a surface, divide it into 2 parts, shape into 2 balls, cover, and let rest for another 10 minutes.

Step 4

Shape the dough into 2 tight loaves. Place seam side down on a baking sheet lined with a towel and dusted with flour, and let rise for 1 hour.

Step 5

Preheat the oven to 480°F.

Step 6

Transfer the loaves to an inverted baking sheet and make cuts with a sharp knife, mimicking the pattern of a leaf.

Step 7

Spray the oven walls with water from a spray bottle, reduce the temperature to 430°F, place the loaves inside, and bake for 30 minutes.
