Ingredients

  • Poultry 0 lbs
  • Chicken Broth 10 fl oz
  • Carrot 1 piece
  • Mini vegetables 8 pieces
  • Whole egg 1 piece
  • 10% cream 5 fl oz
  • Butter 2 tablespoons
  • Salt to taste

Step-by-Step Guide

Step 1

First, prepare the vegetables: slice the onion into half rings, cut the carrot into thin strips, and peel the potatoes.

Step 2

Take a heavy-bottomed pot and melt 2 tablespoons of butter in it.

Step 3

Sauté the vegetables until soft over medium heat (about 10 minutes), add the chicken and lightly brown it. Then pour in the broth, add the potatoes, bay leaf, and black peppercorns.

Step 4

Bring the soup to a boil and simmer on low heat for 30-35 minutes. When the chicken is tender, remove it from the pot along with the bay leaf and pepper. Separate the meat from the bones.

Step 5

In a separate bowl, whisk the yolk with the cream, add a ladle of hot broth, and mix thoroughly. Pour the resulting mixture into the soup, stir quickly, and season with salt and pepper.

Step 6

Return the chicken meat to the soup, heat it through, but do not bring it to a boil! Serve the waterzooi with croutons, garnished with herbs.
