Watermelon Jelly
Ingredients
- Gelatin 0 oz
- Sugar ½ cup
- Salt to taste
- Meyer Lemon Juice 1 tablespoon
- Watermelon 5 lbs
Step-by-Step Guide
Step 1
In a small bowl, mix the gelatin with 60 ml of cold water. Let it bloom for 5 minutes.
Step 2
Meanwhile, in a saucepan, combine the sugar, a pinch of salt, and 60 ml of water. Bring to a boil over high heat, stirring until the sugar dissolves. Remove from heat and stir in the gelatin mixture.
Step 3
In a blender, combine the lemon juice and half of the watermelon flesh. Blend until pureed. Then add the remaining flesh and blend again. Strain through a sieve. You will need only 720 ml of puree.
Step 4
Combine the 720 ml of watermelon puree with the gelatin mixture. Pour into 6 dessert cups. Refrigerate until set.
