Description
Watermelon honey, also known as nardek. In terms of texture, this dish truly resembles honey, but it is made by people instead of bees—watermelon juice is filtered and reduced to this state. To obtain 1 kg of nardek, at least 16 kg of watermelons are required.
Ingredients
- Watermelon 30 lbs
- Water to taste
Step-by-Step Guide
Step 1
Wash the watermelon and pat it dry.
Step 2
Cut into four pieces in a basin to avoid losing the juices.
Step 3
Remove the flesh from the rind and mash it with a potato masher.
Step 4
Strain the watermelon pulp through a sieve to remove the seeds.
Step 5
Then transfer the watermelon puree to a cheesecloth or kitchen towel and squeeze the juice into a thick-bottomed pot.
Step 6
Bring the apricot juice to a boil over high heat, stirring constantly.
Step 7
Skim off the foam and strain again through a cheesecloth.
Step 8
Place the juice over low heat and simmer for 4–5 hours, stirring frequently. The juice should reduce by 5 to 6 times.
Step 9
To check the readiness of the watermelon honey, drop a small amount of syrup onto a cold saucer. If the drop spreads or spreads very slowly, the honey is ready. Transfer the finished watermelon honey into a glass jar.
Step 10
Store the watermelon honey in the refrigerator.
