  • Citrus Zest Mix 2 teaspoons
  • Self-rising flour 0 oz
  • Farm fresh eggs 3 pieces
  • Milk 5 fl oz
  • Meyer Lemon Juice 4 tablespoons
  • Powdered Sugar to taste
  • Cream to taste

Step-by-Step Guide

Step 1

Preheat the oven to 355°F. Grease a 1.25-liter ceramic dish with 10 grams of softened butter.

Step 2

Using a mixer, beat the remaining butter, sugar, and zest until creamy. Add the egg yolks and mix well again. Add the flour and milk, then pour in the lemon juice. Don't worry if the batter looks a bit uneven.

Step 3

In a dry bowl, whip the egg whites until stiff peaks form and gently fold them into the batter with a metal spoon (do not use a mixer).

Step 4

Pour the batter into the prepared dish and place it in a deep baking tray. Fill the tray with hot water up to one-third and bake for 55 minutes until golden brown. Let it sit for 5 minutes and serve, dusted with powdered sugar and drizzled with cream.
