Warm Cherry Pudding with Rum

Ingredients

  • White bread 25 oz
  • Whipped Cream 2 cups
  • Milk 2 cups
  • Sugar 1¼ cups
  • Farm fresh eggs 8 pieces
  • Dark rum ¼ cup
  • Vanilla extract 2 tablespoons
  • Ground dried cherries 1½ cups
  • Caramel Syrup to taste

Step-by-Step Guide

Step 1

Preheat the oven to 390°F. Use a round cutter about 7.5 cm in diameter to cut circles from the bread and place them on a baking sheet. Bake in the oven for about 5 minutes until the bread is golden brown. Reduce the oven temperature to 355°F.

Step 2

In a saucepan, combine the cream, milk, and sugar, and bring to a boil, stirring until the sugar dissolves. In a bowl, whisk the eggs well and gently incorporate the hot cream mixture. Add the rum and vanilla.

Step 3

Grease 8 small soufflé dishes with butter and place them on a baking sheet. In each dish, place one circle of bread, followed by 1 tablespoon of cherries. Repeat the layers 3 times, finishing with bread on top. Pour the prepared cream into the dishes and let sit for 30 minutes, gently pressing the bread down.

Step 4

Bake for about 35 minutes until golden brown. Cool for 10 minutes and serve warm with caramel sauce.
