Warm Blue Cheese Tart with Pears and Vinaigrette Dressing
Ingredients
- Breadcrumbs 5 oz
- Parmesan Cheese 0 oz
- Butter 0 oz
- Farm fresh eggs 3 pieces
- Blue Cheese 5 oz
- Cottage cheese 10 oz
- Semi-soft cream cheese 5 oz
- Chives 1 tablespoon
- Scallions 1 bunch
- Pears 4 pieces
- Garlic 1 clove
- Coarse Salt 1 teaspoon
- Balsamic Vinegar 1 tablespoon
- English Dry Mustard 1 teaspoon
- Olive Oil 4 tablespoons
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel the pears, leaving the stems. Lay the pears on their sides, cut the stems off with a knife, stand the pears upright, and carefully cut them in half starting from the stems. Remove the cores, then slice them thinly, keeping them connected at the top. Gently press, and the slices will fan out.
Step 2
Crush the garlic with salt in a mortar, add mustard and black pepper, then incorporate the vinegar, followed by the olive oil. Whisk until smooth. The dressing is ready.
Step 3
Preheat the oven to 375°F. While the oven is heating, mix the breadcrumbs with the cheese, pour in the melted butter, and season generously with pepper. Spread the mixture in a baking dish, distributing it evenly across the bottom.
Step 4
Place the dish in the oven and bake for 12–15 minutes. Keep an eye on the crust; it should be golden brown: if underbaked, the tart base will not be crispy. Remove the dish from the oven and reduce the temperature to 355°F.
Step 5
Beat the eggs, crumbly and soft cottage cheese, add a bit of pepper, then mix with the mashed blue cheese and chives. Transfer the mixture to the tart base, sprinkle with green onions, and return to the oven. Bake for 30–40 minutes, until the center is set.
Step 6
The tart should be served warm with half a pear drizzled with a little dressing.
