Description
A light, warming soup, especially great for lovers of Asian cuisine.
Ingredients
- Beef 10 oz
- Rice Noodles 15 oz
- Lemon 1 piece
- Peanut Sprouts 5 oz
- Fresh Mint 0 oz
- Parsley 0 oz
- Onion 2 pieces
- Garlic 2 cloves
- Soy Sauce 0 fl oz
- Green Butter 0 oz
- Lemongrass 1 stalk
Step-by-Step Guide
Step 1
Prepare a spiced beef broth. I added lemongrass, a whole onion, several chili peppers, black peppercorns, salt, and bay leaves.
Step 2
Soak the noodles in cold water for 30 minutes.
Step 3
In a deep bowl, layer the lettuce leaves (I used sea asparagus, purslane, corn salad, and Swiss chard), then add the bean sprouts (I had mung bean sprouts), mint, thinly sliced onion rings, and noodles. Slice the cooked beef thinly and add it to the ingredients in the bowl.
Step 4
Season the noodles and greens with soy sauce and pour hot broth over them.
Step 5
Serve with a slice of lemon and sprinkle with parsley (or cilantro).
