Vietnamese Chicken Pho
Ingredients
- Poultry 25 oz
- Rice Noodles 5 oz
- Fresh Mint ½ bunch
- Mild Chili Spice 1 piece
- Lime ½ piece
- Scallions 1 bunch
- Peanut Sprouts 0 oz
- Fish Oil 1 tablespoon
Step-by-Step Guide
Step 1
Cook the chicken broth (breasts + thighs), adding half a chopped chili pepper, dill, parsley, cilantro, and peppercorns after boiling. Add the soybean sprouts 5-10 minutes before it's done.
Step 2
Remove the skin from the cooked chicken and shred it into the broth.
Step 3
Cook the rice glass noodles separately according to the package instructions - this will take about 10 minutes. Add the noodles to the broth.
Step 4
Before serving, add fresh mint leaves and squeeze half a lime. For those who like it spicy, add a couple of slices of chili. Top with finely chopped green onions.
Step 5
Season with fish sauce to taste.
