Viennese Pretzel with Almonds
Ingredients
- Wheat Flour 10 oz
- Starch film 0 oz
- Milk 8 tablespoons
- Sugar 10 oz
- Salt a pinch
- Butter 5 oz
- Farm fresh eggs 2 pieces
- Vanilla salt 0 oz
- Ground Almonds 5 oz
- Powdered Sugar 5 oz
- Chopped almonds 5 oz
Step-by-Step Guide
Step 1
Sift the flour into a mound with the starch and baking powder, making a well in the center. Add 4 tablespoons of milk, 120 g of sugar, and salt into the well. Cut the butter into cubes, place it on the flour, and quickly knead into a smooth dough by hand. Let it rest for 30 minutes, covered with a napkin.
Step 2
Prepare the filling. Beat the eggs with the remaining sugar and vanilla sugar. Gradually mix in the ground almonds. Add a little milk until a homogeneous creamy mixture is formed.
Step 3
Roll out the dough on a floured surface into a rectangle of 50x60 cm, spread the almond mixture on top, and roll it up from the long side. Shape it into a ring on a greased baking tray, or place it in a bundt pan. Bake the pretzel in a preheated oven at 390°F for 1 hour.
Step 4
Prepare the glaze. Dissolve the powdered sugar with 2 tablespoons of hot water. Once the pretzel has cooled, cover it with the glaze and sprinkle with almond flakes or finely chopped almonds.
