
Viennese Chocolate Sablé

Description
I sometimes make different shapes of dough. The taste does not change. The flavor of the cookies directly depends on the quality of the butter.
Ingredients
- Wheat Flour 10 oz
- Butter 10 oz
- Salt a pinch
- Egg white 2 pieces
- Powdered Sugar 5 oz
- Cocoa Powder 0 oz
Step-by-Step Guide
Step 1
Sift the flour and mix it with cocoa powder.
Step 2
Beat the butter until creamy, then add the powdered sugar and beat again. Do not substitute powdered sugar with regular sugar.
Step 3
Beat the egg whites with salt.
Step 4
Add the egg whites to the butter and mix until smooth. Then add the flour with cocoa and mix.
Step 5
Line a baking sheet with parchment paper, fill a piping bag with the mixture, and pipe cookies in the shape of a W onto the parchment. Bake for 10–12 minutes in a preheated oven at 355°F.
Step 6
Allow the cookies to cool.
