Viennese Cherry Pie
Ingredients
- Marinated cherries 15 oz
- Wheat Flour 5 oz
- Butter 5 oz
- Sugar 5 oz
- Farm fresh eggs 5 pieces
- Chopped almonds 5 oz
- Honey 0 oz
- Cream 0 fl oz
- Powdered Sugar 0 oz
- Baking Powder 1 teaspoon
- Vanilla salt to taste
Step-by-Step Guide
Step 1
If the cherries are frozen, they need to be thawed.
Step 2
Grease a 24–26 cm diameter springform pan with olive oil.
Step 3
Beat the butter with sugar until light and creamy. Continuing to beat, add the eggs one at a time, then the honey, half of the sifted flour, a pinch of salt, and the baking powder. Add the remaining flour.
Step 4
Pour the batter into the pan, and place as many cherries on top as possible.
Step 5
Prepare the filling: in a mixer at medium speed, beat 1 egg with 30 g of powdered sugar, add vanilla to the egg mixture, and while constantly stirring, gradually pour in the cream.
Step 6
Pour the prepared mixture over the cherry pie.
Step 7
Sprinkle the pie with chopped almonds and bake in a preheated oven at 355°F for 30–40 minutes.
Step 8
Sprinkle the finished pie with powdered sugar.
