Description

Moldovan vertuta in our 'Golden Thousand'! This delicious pastry is made from thinly stretched dough with small pieces of feta cheese between the layers. The thinner the layer, the tastier it is.

  • Wheat Flour 20 oz
  • Water 10 fl oz
  • Vegetable Oil 5 fl oz
  • Salt a pinch
  • Feta cheese 15 oz
  • Parsley 0 oz
  • Dill 0 oz
  • Scallions 0 oz
  • Butter 5 oz
  • Chicken Egg 1 piece

On a clean work surface, pile up some flour and make a well in the center. Pour warm water into the well, add a pinch of salt, and start kneading the dough. Gradually add 75 ml of vegetable oil. You can also knead the dough in a mixer. If necessary, add a little more flour. The dough should be very elastic, not too stiff but also not too soft, and it should not stick to your hands. Once ready, place the dough in a bowl, cover it with a towel, and let it rest for 40 minutes.

Grate the feta cheese and mix it with chopped herbs for the filling.

Divide the dough into four equal parts.

Roll each piece into a circle, dust with flour, cover with a cloth, and let it rest for another 5-10 minutes.

Melt the butter and mix it with the vegetable oil.

Take one rolled-out piece of dough, grease the work surface with vegetable oil, and begin stretching the dough in all directions. You can use the force of gravity and stretch the dough while it's hanging. In the end, the dough should be very thin and transparent.

Brush the stretched dough with a mixture of butter and vegetable oil, spread a bit of filling evenly over the entire surface of the dough, and roll it up into a log.

Place the roll in a spiral shape in the center of the baking dish. Do the same with the remaining dough and filling. Each subsequent roll should continue the spiral, so that in the end, you have a large snail-shaped pie.

Brush the pie with an egg mixed with a small amount of water.

Bake in an oven preheated to 390°F until golden brown.
