Vegetarian Spicy Beetroot Soup-Puree
Ingredients
- Beetroot 1 piece
- Water 25 fl oz
- Potatoes 2 pieces
- Fresh Ginger Root 0 oz
- Vegetable Oil to taste
- Ground coriander to taste
- Herbs to taste
- Pepper Mix to taste
- 30% Cream 0 fl oz
Step-by-Step Guide
Step 1
Grate the ginger. Cut the potatoes and beetroot into cubes. Note that the beetroot cubes should be smaller, as they take longer to cook.
Step 2
Add the beetroot and potatoes to boiling water. Cook until tender.
Step 3
In a skillet, sauté the coriander and ginger. Transfer to the pot with the vegetables and cook for another 2 minutes.
Step 4
Remove from heat and blend the soup until smooth with an immersion blender. Alternatively, you can remove and mash the vegetables if you don't have a blender.
Step 5
Place the pot back on the heat, add salt and pepper, bring to a boil, and turn off the heat.
Step 6
Stir in the cream, mix well, and add herbs.
