Vegetarian Soup with Red Lentils and Cauliflower

Description
You can use vegetable broth instead of water. Serve with croutons.
Ingredients
- Potato 2 pieces
- Cauliflower 1 head
- Carrot 1 piece
- Orange Bell Peppers 1 piece
- Lentils 5 oz
- Celery stalk 2 pieces
- Water 0 qt
- Vegetable Oil 1 tablespoon
- Spices to taste
- Salt to taste
Step-by-Step Guide
Step 1
Boil the water, add salt, bay leaf, and dill to taste.
Step 2
Cut the potatoes into small cubes, break the cauliflower into florets, rinse the red lentils, and add them to the water.
Step 3
Grate the carrot, chop the pepper; sauté in vegetable oil with spices (red pepper, turmeric, asafoetida, nutmeg, ginger, coriander). Add to the other vegetables after 8–10 minutes. Cook until done (about another 5–10 minutes).
Step 4
Juice the celery, add it to the soup, and let it steep for 15 minutes.
