Vegetarian pea soup
Ingredients
- Leek 3 stalks
- Garlic 4 cloves
- Olive Oil 0 fl oz
- Vegetable Broth 0 qt
- Ground Paprika 0 oz
- Frozen Green Peas 15 oz
Step-by-Step Guide
Step 1
Slice the leek into rings and chop the garlic into small pieces.
Step 2
In a deep pot, sauté the garlic in olive oil over medium heat, then add the leek.
Step 3
Sauté everything until the leek starts to become translucent. Then add the broth and bring to a boil.
Step 4
Add the pepper, paprika, and peas to the boiling soup. It doesn't matter if the peas are fresh or frozen. Cook for another 5 minutes. Then blend everything with an immersion blender.
Step 5
The soup is great served hot or cold. Croutons are a perfect addition!
