Vegetarian Mushroom Solyanka

Ingredients

  • Salad Potatoes 2 pieces
  • Onion 1 head
  • Carrot 1 piece
  • Orange Bell Peppers 1 piece
  • Pickled Chanterelles 10 oz
  • Pickles 6 pieces
  • Olives stuffed with lemon 10 pieces
  • Lemon to taste
  • Passata Tomato Sauce 4 tablespoons
  • Spices to taste
  • White Cabbage 10 oz

Step-by-Step Guide

Step 1

Sauté the chopped carrot in a saucepan with sunflower oil and gradually add finely chopped onion, then bell pepper, mushrooms, pickles, and finally olives. Simmer for 7–10 minutes.

Step 2

Add diced potatoes and shredded cabbage. Pour in the tomato paste and 150 ml of water.

Step 3

Simmer for another 15 minutes, then add water and spices, along with a couple of lemon slices. Cook on low heat until the potatoes are done.
