
Vegetarian Lentil and Celery Soup

Description
Instead of leek, you can use regular onion. You can also try making the soup with green lentils; in this case, you can add cream at the end of cooking.
Ingredients
- Red Lentils 10 oz
- Celery 5 oz
- Leek 5 oz
- Carrot 1 piece
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Put the lentils on the heat and cook until ready.
Step 2
Meanwhile, peel the celery and cut it into small pieces.
Step 3
Slice the leek into rings and grate the carrot on a fine grater.
Step 4
Heat olive oil in a pan and sauté the celery, carrot, and leek until soft.
Step 5
When the lentils are ready, drain the excess water. Leave enough water to make a puree soup.
Step 6
Add the sautéed vegetables to the lentils and bring to a boil, then season with salt and pepper.
Step 7
Remove the resulting soup from the heat and blend it into a puree with a blender.
Step 8
The finished soup can be topped with toasted pumpkin seeds.
