Vegetarian Curry Soup
Ingredients
- Broth 4 cups
- Sour Apples 3 pieces
- Curry Powder 2 tablespoons
- Cauliflower 1 head
- Onion 2 pieces
- Olive Oil 2 tablespoons
- Cream 10 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Finely chop the onion and slice the apples; break the cauliflower into florets. Heat the broth.
Step 2
In a pot, heat the oil and sauté the onion, then add the curry.
Step 3
After 2-3 minutes, add the apples and simmer for another 5-6 minutes.
Step 4
Add the cauliflower and sauté for another minute.
Step 5
Pour in the broth and bring to a boil.
Step 6
Cook on low heat until the cauliflower is tender.
Step 7
Remove from heat and add the cream.
Step 8
Before serving, you can sprinkle with herbs.
