Vegetarian Bean Soup

Ingredients

  • Fresh Cilantro ½ bunch
  • Red Canned Beans 2 cans
  • Plum Tomatoes in Their Juice 1 can
  • Onion 1 head
  • Garlic 3 cloves
  • Carrot 1 piece
  • Water 10 fl oz
  • Dried Basil ½ tablespoon
  • Ground Black Pepper to taste
  • Salt to taste
  • Sour Cream to taste

Step-by-Step Guide

Step 1

Put the water on the stove, and after it boils, add both cans of beans, draining the liquid first.

Step 2

Sauté the onion in olive oil until it becomes translucent, then add the garlic and carrot. Sauté everything together for 3-4 minutes.

Step 3

Add the sautéed vegetables along with the canned tomatoes to the beans.

Step 4

Add the spices: pepper and dried basil. Reduce the heat and let the soup simmer for 15-20 minutes.

Step 5

Add the chopped fresh cilantro.

Step 6

Serve with sour cream. It tastes even better.
