Vegetable Tartlets
Ingredients
- Coarsely Ground Rye Flour 1 cup
- Hazelnut 5 oz
- Olive Oil 0.3 cups
- Water 0.3 cups
- Baking Powder 1 teaspoon
- Salt to taste
- Eggplants 1 piece
- Courgette 1 piece
- Spanish onions 1 head
- Tomatoes 2 pieces
- Orange Bell Peppers 1 piece
- Morels 5 oz
- Parmesan Cheese 5 oz
Step-by-Step Guide
Step 1
Grind the hazelnuts into a flour-like consistency. Mix the hazelnuts, flour, olive oil, water, salt, and baking powder to form a dough.
Step 2
Place the prepared dough into pre-greased tartlet molds with olive oil. Carefully and evenly distribute it along the walls of the molds. Place in an oven preheated to 355°F for 5 minutes.
Step 3
Chop the onion into small cubes and sauté in a pan. Add finely chopped zucchini, eggplant, and sliced mushrooms. Then add peeled and diced tomatoes and bell pepper.
Step 4
Sauté covered until partially cooked. Season with salt and pepper.
Step 5
After 5 minutes, remove the partially cooked tartlet bases and fill them with the sautéed vegetables, then grate Parmesan cheese on top.
Step 6
Bake in the oven for 10-15 minutes. Serve garnished with herbs and olives.
