Vegetable soup with zucchini
Ingredients
- Garlic 2 cloves
- Cauliflower 10 oz
- Crushed Tomatoes in Their Own Juice 30 oz
- Young zucchini 15 oz
- Thyme ½ spoons
- Pasta (corkscrew) 5 oz
Step-by-Step Guide
Step 1
Finely chop the garlic. In a heavy-bottomed pot, heat 1 tablespoon of vegetable oil. Add the garlic and sauté until fragrant, about 1 minute.
Step 2
Add the crushed tomatoes along with their juice and 700 ml of water. Bring to a boil, then add the pasta and cook for about 5 minutes. While the pasta is cooking, dice the zucchini. Break the cabbage into small florets.
Step 3
Five minutes after the pasta starts boiling, add the vegetables and thyme to the pot, seasoning with salt and pepper to taste. Cook until the vegetables are tender, about 5–7 minutes.
