Ingredients
- Red Currant 10 oz
- Courgette 10 oz
- Orange Bell Peppers 10 oz
- Carrot 10 oz
- Tomatoes 10 oz
- Potato 1 piece
- Onion 5 oz
- Eggplants 10 oz
- Water 5 qt
- Olive Oil 0 fl oz
- Garlic to taste
- Paprika to taste
- Khmeli-suneli to taste
- Ground coriander to taste
- Celery stalk 5 oz
Step-by-Step Guide
Step 1
Wash the cabbage and chop it into cubes.
Step 2
Peel the celery and cut it into half-rings.
Step 3
Cut the zucchini, carrot, bell pepper, onion, and eggplant into 1 cm cubes.
Step 4
Pour olive oil into a pot, add the chopped onion and pepper. Sauté for 5–7 minutes.
Step 5
Add the remaining vegetables and fry for another 10–15 minutes.
Step 6
Pour water into the pot, add the whole peeled potato. Cook until the potato is done.
Step 7
Once the potato is ready, remove and discard it.
Step 8
Season the finished soup with salt and add spices.
Step 9
Garnish with chopped cilantro.
