Vegetable Soup with Oregano
Ingredients
- Dried Rosemary a pinch
- Olive Oil 1 teaspoon
- Onion ½ head
- Garlic 1 clove
- Broccoli ½ head
- Orange Bell Peppers 1 piece
- Celery stalk 1 piece
- Carrot 1 piece
- Passata Tomato Sauce 5 oz
- Chicken Broth 10 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Heat the olive oil in a pot over medium heat and add the finely chopped onion. Sauté for 2-3 minutes until soft, without browning.
Step 2
Add the minced garlic and diced broccoli, carrot, and celery. Stir, cover with a lid, and let sit for 1 minute. Add the passata, broth, and oregano. Bring to a boil, reduce the heat, cover, and simmer for 20 minutes until the vegetables are tender. Season with salt and pepper and serve.
