Vegetable soup with chestnuts and mushrooms
Ingredients
- Onion 1 head
- Carrot 1 piece
- Pickled Chanterelles 15 oz
- Celery salt 1 piece
- Olive Oil 5 tablespoons
- Garlic 3 cloves
- Peeled chestnuts 20 oz
- Salt to taste
- Chicken Broth 0 qt
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Slice the celery and onion into thin rings. Cut the carrot into rounds. Sauté the vegetables in olive oil.
Step 2
Rinse the mushrooms, cut them into strips, and add them to the vegetables. Cook until the mushrooms are browned. Add the garlic and remove from heat after a few minutes.
Step 3
Combine the vegetables and mushrooms with the vegetable broth.
Step 4
Add the pre-peeled and boiled chestnuts, bring to a boil, and cook for 20 minutes. Season with salt and pepper.
Step 5
Add chopped herbs.
