Vegetable Soup with Beans in Chicken Broth
Ingredients
- Chicken Broth 1½ liters
- Cauliflower 20 oz
- Chinese green beans 5 oz
- Onion 1 piece
- Carrot 5 oz
- Leek 1 bunch
- Butter 0 oz
- Potato 15 oz
- Celery salt 0 oz
Step-by-Step Guide
Step 1
Dice the carrot and onion, slice the leek, and sauté them in butter. Break the cauliflower into florets.
Step 2
Dice the potato and celery root, and cut the green beans into pieces.
Step 3
Add the potato to the boiling broth or water and cook for 5–10 minutes. Add the cauliflower, celery, sautéed carrot and onion, and pieces of green beans, and cook until done. Ten minutes before the end of cooking, season the soup with salt, add pepper and bay leaf. When serving, sprinkle the soup with finely chopped herbs.
