Description

These samosas can be made without dough: just shape the mixture into small triangles and place them to dry at 40 degrees Celsius for 3 hours until golden brown.

  • Macadamia Nuts 6 cups
  • Macadamia Nuts 4 cups
  • Coconut Urbech 2 pieces
  • Cauliflower 3 heads
  • Radish 1 piece
  • Turmeric 1 piece
  • Turnips 3 pieces
  • Ocean salt to taste
  • Garlic 6 cloves
  • Red Curry Powder 2 teaspoons
  • Red Curry Powder 3 teaspoons
  • Ground Cumin 1 teaspoon
  • Red Long Chili Peppers 2 pieces
  • Green Peas 2 cups
  • Wheat Flour 5 lbs
  • Water 5 fl oz
  • Vegetable Oil 0 qt
  • Salt to taste

Step-by-Step Guide

Step 1

Chop the nuts, cauliflower, coconut flesh, turmeric root, radish, and carrots in a food processor.

Step 2

Add salt, garlic, turmeric, cumin, curry, chopped peas, and peppers. Mix everything well by hand.

Step 3

In a large bowl, mix the flour with water and knead a stiff dough. Add a pinch of salt.

Step 4

On a table (you can dust it with flour), roll out the dough and divide it into several parts. Roll the dough balls into circles, then cut each in half. From the half-circle of dough, form a cone, moistening the edge with water to make it easier to seal. Fill the 'cone' with the filling and seal the edges, also moistening them with water.

Step 5

Heat the oil to 355°F. Fry the pastries for 3-4 minutes, stirring gently. Then place them on paper towels to remove excess oil.
