Ingredients
- Broccoli 20 oz
- Celery salt 5 oz
- Onion 1 head
- Garlic 2 cloves
- 33% Cream 5 fl oz
Step-by-Step Guide
Step 1
Sauté the onion and garlic until soft, then add the diced celery, season with salt and pepper. Simmer for about 10 minutes, pour in half of the cream, and cook covered for 20 minutes.
Step 2
Meanwhile, bring water to a boil.
Step 3
After 20 minutes, transfer the sautéed celery to the boiling water (about 2 liters), bring to a boil, cook for 10 minutes, then add the broccoli florets. Bring to a boil and cook for 5 minutes.
Step 4
Let the soup cool slightly, then blend with an immersion blender, taste, season with salt and pepper, add the remaining cream, and bring to a boil.
