Vegan Tofu Dough

Description
Carob powder is also known as carob (or carob bean). Here it is used as a thickener. You can substitute it with regular dried flour. This dough can be used for open pies or pizzas. It rolls out easily with a rolling pin on an oiled surface. When baking the pie, I recommend layering the ingredients upside down — all the filling in reverse order and the dough on top, so it bakes better. Then the pie can be easily flipped onto a serving plate. Recipe by Mark Johnson.
Ingredients
- Tofu 10 oz
- Glutinous Rice Flour 0 oz
- Carob gum 4 teaspoons
- Olive Oil 1 tablespoon
- Herbs to taste
- Salt to taste
Step-by-Step Guide
Step 1
In a blender, combine the tofu and herbs.
Step 2
Add the rice flour and salt and blend again.
Step 3
Add the carob powder and oil and blend again. The result should be a soft dough that can easily be rolled into a pliable ball.
Step 4
Place the dough in an airtight container and refrigerate for a while (from half an hour to overnight).
