  • Spelt 10 oz
  • Coarsely Ground Rye Flour 10 oz
  • Water 10 fl oz
  • Salt 0 oz
  • Onion 5 oz
  • Dry yeast 0 oz
  • Vegetable Oil 1 tablespoon

Step-by-Step Guide

Step 1

Finely chop the onion and sauté in vegetable oil until soft and translucent. Let it cool.

Step 2

In a bowl, mix both flours, water, yeast, and salt. Knead the dough for at least 10 minutes — this affects the fluffiness of the bread. Transfer to an oiled bowl, cover with a towel, and let it sit in a warm place for 1 hour.

Step 3

Then, fold in the sautéed onions, knead again, shape the dough into your desired form (this bread is best baked as a thick flatbread), and place it on a baking sheet lined with parchment paper. Cover with a towel and let it rise for another 1 hour.

Step 4

Meanwhile, preheat the oven to 430°F.

Step 5

Bake the bread for 10 minutes, then reduce the temperature to 390°F and bake for another 30–40 minutes until done.

Step 6

Cool and serve.
