Vegan Potato Cake
Ingredients
- "Jubilee Cookies" 20 oz
- Chopped almonds 5 oz
- Margarine 1 piece
- Chopped almonds 5 oz
- Sugar 6 tablespoons
- Vanillin 0 oz
- Cocoa Powder 6 tablespoons
- Boiling water 15 fl oz
- Rum essence 1 teaspoon
Step-by-Step Guide
Step 1
Make a syrup from water, sugar, and cocoa: bring the ingredients to a boil and simmer for 2–3 minutes on the lowest heat, then cool.
Step 2
Beat the margarine with a mixer.
Step 3
Gradually pour in the syrup in a thin stream. Add vanillin. This will create a liquid cream.
Step 4
Crush the cookies into crumbs (you can use dry white bread).
Step 5
Gradually add the cookie crumbs to the cream. Mix well until homogeneous. Add the nuts.
Step 6
Finally, add the rum essence. Shape into cakes, roll in the remaining crumbs or cocoa. Refrigerate for a few hours.
