Step 1

Prepare the ingredients.

Step 2 Image

Step 2

In a large bowl, combine the flour, cocoa powder, baking soda, salt, and 70 grams of powdered sugar.

Step 3 Image

Step 3

Add vanilla extract and 140 grams of cubed margarine. Beat at medium speed for 5 to 10 minutes.

Step 4 Image

Step 4

Place the dough on plastic wrap, cover it with another layer of wrap. Roll it out to a thickness of about 0.5 cm.

Step 5 Image

Step 5

Line a baking tray with parchment paper. Dust a cookie cutter with flour. Cut out cookies with a diameter of about 5 cm and carefully transfer them to the baking tray.

Step 6 Image

Step 6

Bake the cookies in the oven for 10–12 minutes at 355°F. Then transfer them to a wire rack to cool.

Step 7 Image

Step 7

While the cookies are baking, prepare the filling. In a saucepan over low heat, combine 180 grams of powdered sugar, 60 grams of margarine, and a pinch of vanilla, stirring constantly. Once the ingredients come together into a thick paste, remove from heat and let cool. It is very important not to heat the mixture too much, or it will separate.

Step 8 Image

Step 8

Roll out the filling between two layers of plastic wrap just like you would with dough. Use the same cutter (or a smaller cutter) to cut out circles of filling.

Step 9 Image

Step 9

Place the filling between the two cookies.

Step 10

Serve with your favorite plant-based milk.
